A knock box is used to store spent espresso grounds after a shot of espresso has been pulled. Because espresso grounds are typically very hot after extraction, knock boxes need to be sturdy. The stainless steel construction of this knock box makes it incredibly robust and durable to withstand the heat and also against the knocks and blows that are so common in a busy commercial environment.
